Beet Pickles

 1 1/2 cups vinegar

1/2 cup water

1 cup sugar (brown or white)

Pickling spice (no red peppers)

2 Tablespoon for 4x recipe

(can put in cheesecloth)


275 degrees in pan of hot water

just to heat sterilized jars & seal


10 pound bag of beets makes 4 quart jars

and 4x the vinegar recipe 

plus a pot of beet borscht
