Use large stainless steel pot for brining.
Make Ahead:
1 gallon vegetable broth add fresh poultry pack of herbs (rosemary, sage) while boiling hot and cool.
Add:
1 - 2 litres apple juice
1 cup salt (can be pickling)
1/4 - 1/2 cup sugar
Stir together to dissolve
Put in whole turkey and add water until turkey is completely covered.
Can add ice if needed.
Brine 8 - 24 hours
Rinse & dry, oil and roast as usual.
*Don't add any further salt as it is in the brine.
