Rhubarb-Oatmeal Bars



Crust:


1 cup all-purpose flour

¾ cup oatmeal - uncooked

1 cup packed brown sugar

½ cup unsalted butter - melted


Filling:


4 cups rhubarb - cut into half inch pieces

1 cup white sugar

2 tsp cornstarch

1 cup water

1 tsp vanilla extract



Mix flour, oatmeal, brown sugar and butter until crumbly. Press half into greased 9 inch pan. Add the rhubarb. 

Combine sugar, cornstarch, water and vanilla. Cook until thick and clear. Pour sauce over rhubarb. Top with other half of crumb mixture.


Bake at 350 F for 45 minutes.
