Cottage Cheese Pancakes


Blend for 1 minute in blender or until smooth:

1 cup cottage cheese

6 eggs

1/2 cup flour or gluten free flour

1/4 teaspoon salt

1/4 cup oil or melted butter

1/4 cup milk or almond milk

1/2 teaspoon vanilla


Cook on griddle or in frypan over medium heat adding a little butter to the pan, then a scoop of batter. (add a little more butter to the pan with each pancake)

Cook until nicely browned on first side then flip and cook just a few seconds more, remove.

Keep warm in oven until all are cooked
