Blueberry Muffins

 2 cups flour 

2 teaspoon baking powder

1/2 teaspoon salt


1 cup yogurt (plain or vanilla)

1 teaspoon baking soda


1 egg

1/2 cup oil

1/2 cup sugar

1 teaspoon vanilla


1 cup fresh or frozen blueberries

     (or raspberries,  saskatoons or a mixture of berries)


Combine first 3 ingredients, set aside.

Combine yogurt and baking soda, set aside

In medium size bowl combine egg, oil sugar and vanilla. Add flour mixture and yogurt alternately, beginning and ending with flour. Stir a Tablespoon of the flour mixture into the berries, fold in.

Spoon into prepared muffin tin.

Sprinkle with sugar.

Bake @ 375 degrees 20 to 25 minutes.


Makes 1 dozen
