Similar to cooked beans
Soak 1 cup dried white beans in water overnight
Drain and cover with water, bring to a boil and add:
1 bay leaf
salt & pepper
simmer for 1 hour.
Sauté:
Bacon and add to soup
sauté 2 stalks celery, 1 onion and 2 carrots, all diced
add to beans
Add large can tomatoes & 1 quart chicken stock. Add chopped parsley.
Cook until done. About 30 minutes more.
*opt. - add chopped potatoes with vegetables
add 1 can tomato soup
