Carrot Cake with Cream Cheese Frosting

 

1 1/2 cups sugar

1 1/2 cup oil

4 eggs


1 cup crushed pineapple, well drained  

2 cups grated carrots

1 cup raisins (optional)

1/2 cup walnuts, chopped (optional)


Combine these dry ingredients in a second bowl:


2 cups flour

2 teaspoon baking powder

1 1/2 teaspoon baking soda

1 teaspoon salt

2 teaspoon cinnamon



Combine eggs, oil & sugar, mix together. Stir in carrots and pineapple.

Add dry ingredients 1/3 at a time and stir.

Add walnuts and raisins if desired.

Pour into greased 13 x 9 pan - bake @ 350 degrees 50 minutes or until springs back and knife comes out clean.  Cool 


*This cake freezes well

* Can substitute a portion of the oil with applesauce


Cream Cheese Frosting:


8 ounce (250 g) cream cheese

1/2 cup butter

1 teaspoon vanilla

1 pound icing sugar


Frosting:

Beat together ingredients. Spread over cake.

Sprinkle with walnuts if desired.
